pectin/methanol/fermentation
« on: April 10, 2010, 05:24:09 PM »
I am not a biochemist, and I had a lot of trouble finding an answer on google.
So, hopefully this is an easy question:
In the fermentation process, is pectin the source of methanol? Are there other sugars that produce methanol when fermented with yeast?
Thanks in advance.

Yes, the pectin is the source for the methanol. I think there are some wood/cellulose sources that will also produce methanol.
