aldol condensation

Hello, would it be any difference by using absolute EtOH and not in aldol condensation reactions(catalysed by base) ?

Those are equilibrium reactions. One product of all the condensations is water, so the presence of more water in the reaction mixture, will shift the equilibrium towards the reactants.
In effect: presence of water -> lower yield

I think EtOH is more widely used, but in general there is not a huge difference... It depends on the solubility of the reagents, the non-solubility of the products (in general the less soluble the better, for sake of favoring equilibrium and making the work-up easier), availability...
