Epsom salt

Does the reaction between Epsom salts + distilled water alter the PH?

Slightly. There will be some hydrolyzis, as HSO4- is a realtively weak acid on one side and Mg(OH)2 is very weakly soluble on the second. Which effect will be stronger is hard to tell without checking constants and calculating.
