silly question but what does the structure of deoxygenated methanol look like? It can't just be CH4?

I think there is a misunderstanding. It means that oxygen what is dissolved in the alcohol is removed. Methanol is still CH3OH

There are two ways to interpret this, either removal of dissolved O2 as Hunter2 says, or removal of the O atom from MeOH, which would indeed be methane. Do you have the context of the phrase "deoxygenated methanol"?
