surface reactions (baking bread)

Hi :)
We are a group of students trying to invent a censor, which can sense when f.ex. a bread is finished baking. We are looking for some information about surface reactions. Does anyone know where we can find such informations?
We have been searching for hours, but we couldn't find anything. Our teacher told us the name of the reaction, but none of us know how to spell it, and neither does he - but it sounds like "mariarh" or "mayah" reaction.
