Hello.

I was wondering if understanding NMR, especially when applied to biochemistry, is valued in the terms of getting a paid job, both in academia and industry.

As above, all knowledge is valued.
Definitely expand your horizons where possible though.
I would say that the most valued analytical technique currently is Mass Spectroscopy
