Title: I think there is a problem in my procedure

The starting materials are amino acid, potassium hydroxide and choline-chloride.
all starting materials dissolved in ethanol, the reaction take place. The product is clear. But when I dissolve amino acid in water, starting material appears in product again..

Does anyone know why!!!!
