Why some reactions are exothermic while others are endothermic? What defines this energy release/absorption? Why some reactions need energy to be stable while others need to release?

This is too broad of a question. But generally, whether a reaction is endothermic or exothermic mostly comes down to the strength (stability) of all the bonds in the reactants versus all the bonds in the products.
