In the neutralization reaction between NH3 and HCl, what are the products? Water should be produced but the salt formed is NH4Cl (HCl donates a proton to NH3). Where would the water molecule come from - or is it not produced?

Usually, ammonia in warer solution is presented as NH3.H2O (sometimes NH4OH which is rather incorrect)
then
NH3.H2O + HCl = NH4Cl + H2O
but also this reaction is correct
NH3 + HCl = NH4Cl
