Title: Avoiding Bactrial Cultures - Wine Storage
Post by: quicksilver on September 28, 2010, 06:47:33 AM
I am looking for a way to avoid aerobic bacteria in wine storage.  I have been told that simply corking will not be enough, as a small amount of air is also bottled.  How can i create a vacuum seal?  That is, I want no air, only liquid, inside of the container.  (Also to be used for vat storage of wine.)

Just add a small amount of sulfate to the wine before bottling.
"Campden" tablets work well.

You should also head to the library. Lots of "How to" books out there.
