I don't know the difference between the "temperature change of water" and "the heat gained by water".

You don't know the difference between temperature and energy? You mean like water boils at 100 kJ and one needs -55°C to warm up a glass of water?

If something had initially a temperature T1 and after the experiment its temperature was T2, the temperature change was T2-T1.
