Who knows anything about solubility of Iron (III) citrate in water and its dependance on pH?

Generally speaking, solubility of compounds where the anion is a base increases with the acidity of the solution.

I am more interested in solubility in water because bottle of this substance does not give this information nor sigma aldrich site as well. Is it possible that when storing this substance is converted to iron hydroxide

I don't think so, unless you want to.

Mind you, is it iron (III) citrate or ammonium iron(III) citrate?

You shoul find Ks than alpha for citrate acid , alpha=f(ph)
