Electrons of cathode rays are of cathode metal or gas filled in the discharged tube?

If there is enough gas to sustain a discharge, most electrons originate in the ionization of that gas.

In vacuum, the electron source is the cathode (or the walls, or or...).

So both modes exist and their behaviour is very different. The tubes use to bear different names.
