While applying potential difference between two wire AC or DC with some resistance load
Does electrons number also change in copper and aluminum
does atom of aluminum and copper also matter like neutron and proton

in electricity electron flow in conductor does changing atom also matter in wire

Electricity can flow through metals because the chemical bond has electrons that are shared among many atoms and are mobile.
This is already so in a piece of metal before you apply an external electric field. Current does not change the state of the atoms significantly in a metal. Especially, current does not add or remove electrons from atoms.
