I am trying to determine the (dis)advantages of electron spray and maldi-tof. I can not find too much online info about either. I really just want to know how electron spray works. I understand maldi/mass spec. Any help is appreciated.

Making the concept as simple as possible -- electrospray is a little more aggressive compared to APCI, but MALDI is even more gentle. It all depends on whether you want source level fragmentation, or not

An other tidbit for electrospray, in order for it to work the analyte needs to be ionizable in solution.
