I did electrolysis of sodium chloride with copper electrodes and I got a yellow precipitate, and then it slowly changed from yellow to blue over a couple days. Any idea what this stuff is?

What you saw was most likely oxygen oxidizing the copper over time. In the future don't do electrolysis experiments with copper.

Sorry to bring up a very old thread. Why not do electrolysis experiments with copper? Copper salts aren't very toxic.
BTW, the yellow insoluble powder was impure copper (I) chloride, which was slowly oxidized to Copper (II) chloride (greenish-blue).
