Chlorides and Nitraees

Hello, I did not know where to put my question.

If I have a solution of whey protein concentrate that contains chlorides and nitrates. When it is dried with high heat I am left with higher nitrates than usual. I am told this comes from the chlorides gassing off. Can someone explain this reaction to me?
