Equations for oxidation of compounds in coffee

I am aware that compounds such as acids and oils can oxidize, but I can’t find a source that details the different reactions. Any example reactions or other sources are greatly appreciated :))

The subject is so broad that it is very difficult to formulate an answer.  If you could identify a particular compound or a particular class of compounds, that might help.

What about the oxidation of lipids in coffee like Triacylglycerols?

I don't know anything specifically about the lipids in coffee.  However, some polyunsaturated lipids (triacylglycerols bearing polyunsaturated fatty acids) are prone to peroxidation.
