I'm confused on how to write the chemical reaction for salicylic acid and sodium hydroxide. When the react, does Na bind with salicylic acid and form this, C7H6O3Na, and leave water as the second product? Any help is appreciated.

Yes. There is also a second acidic proton to consider.

There are slightly different ways that one could write the balanced equation.  What should you call the anion in this case?  It is not quite correct to call it salicylic acid.
