Biochem - Blood Testing

I have been researching the cause of "phalaris staggers" in sheep, and in order to progress in my research I will need to be able to test vitamin and neurotransmitter levels in sheep.  I know that these levels can be determined by blood or urine tests for metabolites, but I have been unable to find any methods of testing for each chemical specifically.

Does anyone have any experience with blood testing or know of any books about specific chemical tests?  If it helps, the chemicals involved are serotonin, thiamine, and cyanocobalamine.

Any information would be greatly appreciated.

As you will see, it's designed for members of the public, not mighty biochemists, so the info is a little thin.  There's a book called "Clinical Chemistry" (not sure about the author) in our library which was brilliant.  Another is called  "Clinical Biochemistry". ;D
