Miraculin is a glycoprotein that makes sour foods taste sweet.  The above link is a simple experiment to try this.  Interesting.

That stuff could have potential uses. The blog suggested healthy foods. I kind of want to try it now.

I kind of want to try it now.

So do I.  Actually, I'd prefer to try the extraction myself, but I don't know if I can get the miracle fruit here.
