Non-Newtonian Liquid/Solid

Hello,
I know that when you add corn starch to water in the right proportions you are left with a material that can flow like a liquid but that, when hit with a sudden force, maintains is rigidity. Can anyone tell me why this is? Does the force of the hit reposition the molecules? Does anyone know any other formulas for such materials? Thanks alot.
