What part of the bitrex molecule is responsible for it's bitter taste?
I have searched and cannot find an answer.

Things with amines and aromatic groups tend to have bitter tastes (e.g. alkaloids).  As for the molecular basis of this, I don't know why.

Ok, i have this for a homework that my tutor said is way above the level we are currently studying at (i am doing my first year of A levels), so she said don't worry to much as it's just designed to try and stretch us!! I would still like to know the answer though!

Dear Kris44;

A little simple spoken: Till now, we know too, too less about our Receptors for different tastes, so Yggdrasil’s; answer is nearly the best you can get at the moment.
I know a few groups who try to find/correlate different measurements on molecular basis with different responses of our Receptors. But I don’t know any results till jet.
