 concedur follwing reaction
CH3COOH+CH3CH2OH=CH3COOCH2CH3+H2O
ho it is concluded that -oH is removed from acetic acid & H is removed from alcohol ???

I think you could do this with isotopic labeling.  Is that what you mean?

For example, if you used 18O labeled ethanol in this reaction and then looked for 18O in the water and ethyl acetate products.  If there was only 18O in the ethyl acetate and only 16O in the water, then you could conclude that the OH part of the water came from the acetic acid.
