reason for smale and colour of any compound

what is the reason for smale and colour of any compound ???
why some compounds has some odour but some are odourless  ???
some compounds has taste but some are tasteless ???
I know sugur is sweat :P because of more number hydroxyl group.Is it true ???
   all the atoms of compounds has the same constituents i.e.electrons,protons,neutrons etc..but they are deffered in the number.Is this the reason for defferent physical properties of defferent compounds ???
