The synthesis of acetanilide

When acetanilide is synthesized using aniline as the starting material, why does only one acyl group form on the acetanilide?  Is it due soley to steric hinderance or is their other reasons?

What factors give an amine reactivity? nucleophilicity? What happens to these properties when an amine becomes an amide?  Draw resonance structures including lone pairs and formal charges for both aniline and acetanilide.  Compare them and relate them to an explanation involving nucleophilicity and electron density/distribution.
