How does (EIS) Impedance Spectroscopy work

I have read over the chapter in Bard and Faulkner's Electrochemical Methods. I havea decent grip on the theory but not the practice. My advisor said go make up an experiment to solve our problems and try to use Double Layer capacitance effect on Impedance Spectroscopy. The problem is we don't have an EIS at our school. So I can't toy with it to figure it out.

SHORT VERSION:
IF looking at double layer capacitance problem, how many electrodes do I need? Does it just give me the graph of Z(real) vs Z(imaginary) or does it give me something else? What variables are typically controlled by the software?
