Converting phosphates to phosphites?

Hello all, i will try and make this short and sweet  ;)

Ive read little bits here and there about phosphites, but i am unsure of how it is made. Ive read about people useing phosphorus acid and phosphoric acid in its manufactoring process. How is it made? At this point i can only guess. Is it the result of phosphoric or phosphorus acid meeting with rock phosphate?  Ive also read that an organic acid was used before in its manufactor.
