you should wear long gloves up to the elbows.
i used to work at the new york hall of science, a children's hands-on museum, where we did demonstrations- one which involved liquid nitrogen. balloons would be placed in a pot of the liquid which shrunk the balloons to 1/10 their sizes. as they warmed up to room temperature, their sizes were restored and the kids went crazy over it!

in any case, we had to wear gloves up to the elbows and no shorter. the reasons they gave was exactly that which was mentioned here- a splash inside the glove will cause burns.
goggles which sealed around the eyes, and some sort of poly apron was required.
there was a part of the demo where the nitrogen was poured over an empty balloon then was smashed into bits.
