Need some help - Substances in Water

Hi Everyone-

So I am having trouble in my Chem Lab. I don't understand what is going on when substances dissolve in water. Can someone explain this to me on a molecular level? I have macroscopic all figured out... I'm just confused with how you can tell how many ions are going to come off, if a certain substance will dissolve, etc.

This has to do with polarity and hydrogen bonding.  Have you learned about these forces?

Yea but I'm kinda confused on it. How does it relate to polarity and hydrogen bonding though? Or can you link me to a good website? I've tried google but keep getting more confused with the sites I go to.
