making a pH scale

Hey, I'm currently researching for my AH project, working out the pKa values of certain fruits. I need to make a pH scale to see at what pH each fruit changes colour at.
Any ideas at all how i could do this?

When you say "changes color" do you mean the fruit itself or something like an indicator?
