MALTODEXTRIN REACTION???
« on: May 01, 2009, 06:05:51 AM »
anyone here know about maltodextrin reaction towards alkali(NaOH)??
does a solution of maltodextrin change color when treated with base?or acid?
help pls...chemical reactions will really be helpful.. :-[

based on what i've searched so far, i think maltodextrin has(or might have) the same chemical vulnerability towards alkali as the full length polysaccharides ..i dunno..i really need help..

Hmm, I would say Maltodextrin is rather stabile under alkaline conditions, as are most polysacharides as you stated and would not react with it specifically. I would also not say it is likely to change colour by just adding dilute acid or base (alkali).
Acidic conditions would indeed cleave the glycosidic bond (bond connecting the sugars), and you would get glucose in the end.

As a general tip, I wouldn't start topics with all capital letters and multiple question marks...

(geesh..really sorry about that. i'll remember that.thanks for the tip. :))

aahhh...so maltodextrin wouldn't, like, react if it will be mixed with NaOH? say, maltodextrin in a plant's(industrial) wastewater wouldn't change if it would be treated with NaOH to raise the pH to ~neutral (since maltodextrin pH is 4-6)?wouldn't there be problems on ellution composition?or color?whaaa..i really need help..
