I want to know how I can find out the amount of catechins there is in green tea! But I have no idea how to can do this

Dear Emily,

You are obviously computer literate, so I would suggest a Google search of "catechins in green tea" (like I did).

This will give you some leads, e.g. reaction of leaves with Pyridine/Ac2O to form the peracetylated compounds, followed by chromatography on silica gel to isolate the principal catechins.   This is in a patent, with complete experimental details.
