How was elements discovered ?

Hello,

I am looking for an  answer on how exactly elements were discovered.
What is the process behind it ? For example how one would
discover carbon ? You take some substance, manipulate it in some
way, ( heat, electricity ) and you get a new substance.  But how do you
know what kind of substance you got ?  And how do you know that
new substance can't be further divided ? ( contains only same element
throughout ).
