Rate of Hydrolysis

How do you calculate rate of hydrolysis?

I'm working on Physical Chemistry lab and I'm stuck on this part:

Calculate the rate of hydrolysis of sucrose in M/s for a concentration of 0.500 M sucrose and your
concentration of acid at one temperature.

I just need to know the equation. Thanks

Well what did you do in this lab?  Did you monitor it through some kind of spectrometer?
