Organic Chemistry and Antioxidants

Hello everyone

I am a high school student currently working on a project where I try to determine antioxidant propertie, if the antioxidant is indeed doing its job, using plant material extract and a spec-20. Basiccally I make a methanolic extract of Cinnamon, place that into solution with, distilled water and Buffer as a standard. Next I  Place the standard into a spec-20 and then set it to 1 absorption. Then I would make another solution of hydrogen peroxide,distilled water, buffer and extract as a test cuvette then placing that into the spec 20 with it already calibrated from the standard. Would the change in absorbance ultimately show be if the antioxidant is indeed working? What is the mechanism and is there a method that would allow me to extract the antioxidant molecule in question, for example, cinnamaldyhide for the cinnamon? Please reply or message me.
