Did you shake your separatory funnel so that the two solvents were very thoroughly mixed before allowing them to separate? I apologize if this sounds like a dumb question, but when I taught this lab the first time, it never occurred to me to actually mention that, and a number of students thought they were just supposed to pour the ethyl acetate into the sep funnel and then drain the water out the bottom.
The two solvents have to be very thoroughly mixed for a sufficient time that the solutes can equilibrate between the two or your results will be badly off.
