About vitamines and microwave oven
« on: January 15, 2012, 01:52:05 PM »
I've just read that that Vitamin B12 is destroyed when food is cooked in a microwave oven, why? does the MW has enough energy to break down the cobalt complex? (just a guess, I don't have any clue)

http://journals.cambridge.org/action/displayAbstract;jsessionid=FC0F7982F7C14D4C7736876AE7183A8D.journals?fromPage=online&aid=5145128

but in this abstract (I can't view the whole paper, anyone?) it says that are reports of both loss and no loss of vitamin A, B1, B2, does anyone can acess the other papers?

In any case, how can MW destroy both hydrosoluble and liposoluble vitamines?

I didn't find more information but I guess that conventional heating destoys the same vitamines as the MW does (sorry, I'm not sure if I said that correctly, I learnt english by myself)
