how do you work out what forms

when a nitrate + oxide + acid are mixed?
ie:M(NO3)2 + MO2 + HNO3       M is a metal.
Just like an acid + base gives a salt + water

acid + oxide -> salt + water

So if it where Mn(NO3)2 + PbO2 + HNO3, I thought there would be
two different salts?

In most cases metal nitrate will be just a spectator - ie. it will not change during reaction. In some cases you will see redox processes.

In this case only PbO2 works as an oxidizer
Mn(NO3)2 + PbO2 + HNO3 = HMnO4 + Pb(NO3)2 + H2O
