The ChemDraw H-NMR simulation is rather crude. It does not take many affects into consideration, field strength, rotamers, solvents, temperature etc. There are better ones out there, ChemDoodle or ACD labs for example.
Development Chemists do it on Scale, Research Chemists just do it!
