You make a good point with respect to collagen.  And I cannot think of any true coenzymes in glycolysis at the moment.  However, I don't see how transaminases could work without pyridoxal phosphate.  And I don't see the TCA cycle happening without thiamin pyrophosphate or at least a modified amino acid whose name escapes me at the moment.
