reaction of cyclohexanone with benzaldehyde gives dibenzylidenecyclohexanone which can acquire Z or E configuration, can they be differentiated by NMR

Yes, they should be different.
You need to identify the olefinic protons and measure the coupling constants. The cis coupling id generally less than the trans.
Development Chemists do it on Scale, Research Chemists just do it!
