The acetylene one is now ok, you get
[C-]#C[H].[Li+]
and ethane.

Now do the same for the alcohol, replace the O-H by O-Na+ and the NH2- by NH3.
So just this? Why doesn't this other example do that? Should I have put the Na on the C-?

Yes, associate the Na+ with the acetylene.
It's as simple as that!
Development Chemists do it on Scale, Research Chemists just do it!
