Topic: Why sometimes tortillas stick to a plate and sometimes they don't.  (Read 2017 times)

So sometimes I will put some cheese on top of a tortilla and heat it up, and sometimes I'll put some sugar/brown sugar/butter on top of a tortilla and heat it up. With cheese, the tortilla doesn't stick to the plate at all, but with sugar/butter/brown sugar, for some reason, I have to scrape the tortilla off the plate.

Is there a chemical explanation for this?

Also sorry if wrong section, I wasn't sure which section this would go in.

What do we usually use to keep food from sticking.  Does cheese have something that sugar doesn't?
