Influence of alkalisation on water activity
« on: May 23, 2015, 11:07:18 AM »
Hi,

For my thesis about cocoa powders i have a question about the influence of alkalisation of cocoa powders on the water activity.
Non alkalised cocoa powder has a pH 6. When alkali is added the pH rises. A higher pH/alkalisation gives a higher water activity.

What's the explanation behind it?

Thanks in advance
