Why is this neutralization's net ionic equation what it is?

I would think it would be H+ + OH- >> H2O ???

Yeah, I would agree with you that the net ionic equation should be [itex]\ce{H+ + OH- -> H2O}[/itex].

Is the equation on the bottom of this image what your professor told you is correct?
Or you could, you know, Google it.

Don't forget H2SO3 is a weak acid, only partially dissociated.
