if a compound is able to react with multiple other compounds, what decides the product?
if gibbs energy for x =-5 , y= -7 and z= -10
is it true most of the product is z?
do the others exist in equilibrium?

If the reactions are reversible, it is determined by thermodynamics. If they are irreversible, it is determined by kinetics.
