Theoretical plate model of gas chromatograph

The Theroretical plate model which is used to help us imagine and understand process in the column. It tells us either 2 things which I found on the net.

1. Stating number of theoretical plates in the column
2. Stating plate height

It says more plates the better and smaller plate height the better. What is the simplest way to explain these 2? I can’t seem to link back to the basic theory

If 1 person has to shake hands with 20 people in a line and another person has to shake hands with 5 people in a line, who reaches the end first?
