Bonding in enzymes/inhibitors

Hello, my name is Chloe and I am a student studying in Scotland.

As part of my course this year, 25% of my final grade is dependent upon an investigation and scientific report that I must produce.
I chose to study the effect of different ions on the rate of hydrolysis of starch by diastase enzymes. The ions I investigated were the OH-, H+ and F- ions.

I basically know how the F- ion affects the enzyme, but I need some kind of reference to quote in my report, so I was wondering, does anyone know of any website, journal or such which shows this kind of information?
