Any suggestions on creating a lab experiment having to do with water from a freshwater aquarium?

Alkalinity, TOC, BOD come to mind.

Probably starting here:

is a good idea.

How do I find out what materials I need and what procedures the experiment needs?  Is it just plain research, if so can anyone suggest a website?  I was thinking about testing the amount of ammonia, nitrite, and nitrate of the water because these are toxic to the fish in the aquarium.
